The women on my mum’s side of the family always were amazing at making fruit preserves. Most of us go to the grocery store to buy jam or jelly. The difference between the two is JAM is mashed and jammed fruit that is heated, and sugar and pectin is added to make it thick then cooled and jarred. JELLY is made the same way except with just the juices of the mashed fruit, it is also heated, then sugar and pectin is added. I am sure you are wondering what pectin is. Pectin is an indigestible carbohydrate that is a good source of fibre. When it is heated with sugar and water or the fruit juices, it thickens into a gel.
Instead of buying Jam or Jelly, I decided to puree fruit and smear it onto my toast in the morning. It has natural sugar, no additives, no high fructose corn syrup, and is quick to make!!
You can make it with any of your favorite fruits. Here is my recipe for my favorite fruit spread.
Ingredients:
1 mango
1 peach
½ cup of coconut with pineapple juice
Preparation:
Add all ingredients into blender and puree
Serve on toast, and save the rest in fridge!
You can experiment with different fruits, such as blueberries, raspberries, blackberries, or apricots. YUM, enjoy!
