Aubs Favorite Snack Salad

So one day I ate a cheat meal breakfast :-P. It contained blueberry pancakes topped with a peach, mango, coconut and pineapple water puree, scrambled eggs and 3 pieces of bacon, not the "healthy" turkey bacon, but the greasy, heart attack, melt in your mouth bacon.  A few hours later I was already thinking about a snack. I though, well, I haven't had a single vegetable today so maybe I will come up with a small green salad to make me feel better about my naughty breakfast. It was a creation of putting together whatever vegetables I currently had in my fridge, but it ended up so good, it is now my favorite salad!

INGREDIENTS:

1 Campari Tomato diced

1/4 avocado cut into cubes

1/2 medium carrot sliced

1 green onion sliced

2 red radishes thinly sliced

1/4 cup sliced cilantro

1 handful spinach chopped

1 oz low fat feta cheese

1 tsp Italian dressing

1 tsp apple cider vinegar

Crushed black pepper to taste

1) Add all ingredients into a small bowl, toss, and ENJOY!!!

If you want to make this salad into a meal, you can add a hard boiled egg, cooked fish, or chicken!
