Pickled Red Onion
/This is seriously a must have in my fridge now! I put it on Pasta Salad, tacos, breakfast, literally anything haha.
I can’t get over how good it is!
Ingredients:
1 Large Red onion
1 3/4 cups white vinegar
1/4 cup apple cider vinegar
1 tablespoon of sugar
1 teaspoon of salt
Dill (i put in 2 sprigs, but you can add what ever herbs you want! Rosemary, coarse black pepper…)
Garlic clove
Directions:
1) In a pot add, vinegar, sugar, salt, dill, garlic. Or whatever herbs you choose. Bring to a boil.
2) Slice onion into thin pieces and put in a large mason jar.
3) Pour boiling vinegar onto the red onion in jar and close lid. Let sit until it is at room temperature. Then store in fridge.
Pickled Red onion should be good for 6 months!!
