Nachos

This isn't my normal healthy recipe post. But I believe in cheat meals and everything in moderation! I made these nachos during a Star Wars Movie get together and they ended up being THE BOMB! Use this recipe as a base, take what you like from it and create your own style of nachos if you want to add chicken or ground beef DO IT!

Why are spicy nachos very nosy?

Ingredients:

1 bag of chips

1 can black beans

1 large bag of shredded cheese of choice

1/2 red onion

3 jalapenos

2-3 serranos (depending on if you enjoy spice)

3 tomatillos

1 large avocado

1 bottle of a hoppy beer (that would be good in queso. I used a Belgian Blonde Ale)

1 bunch Cilantro

1 tomato diced

1-2 limes Juiced

You will also need a pan, parchment paper, and food processor or blender

Directions:

  1.  Preheat oven to 400 degrees F.  Line the cooking pan with parchment paper.
  2.  Layout the chips on the pan. Spread out chips to edges on the pan so toppings can get on all chips!
  3. Open can of beans and spread out over chips making sure to get chips on the outer edges.
  4. Add part of the shredded cheese on top of the nachos and place in oven.
  5. In a saute pan add 1/3 of the bottle of beer and bring to a boil.
  6. Add shredded cheese. Once it starts to melt you can add diced half of the diced red onion, 1 sliced jalapeno, and half of the diced tomato. (This infuses the cheese with more flavor, but if you don't want to have these ingredients you don't have to add it in)
  7. Once the cheese has turned into a queso open the oven and drizzle over the nachos. Place nachos back in the oven for additional 5-8 minutes or until nachos look crispy and cheese is melted.
  8.  Take the nachos out of the oven and top with jalapenos, diced avocado, diced red onion, and cilantro!
  9. Additionally, you can make a salsa by blending the tomatillos, cilantro, serrano, and lime juice. IT'S AWESOME and will have a bit of a kick to it!
  10. If you want a salsa that is milder you can make Pico de Galo by chopping up tomatoes, red onion, jalapeno, cilantro, and lime juice.
