Homemade Mountain Granola

So I’m still messing around with this recipe. The first batch practically crumbled apart and the second is almost there. I’m probably going to keep modifying this through time by adding and subtracting better ingredients or making new flavors. But they are pretty yummy.

 

INGREDIENTS:

 

2 cups of rolled oats

½ cup shredded coconut

¼ cup chopped nuts

¼ cup of dark chocolate

5 raspberries pulled apart in pieces

½ cup fresh squeezed orange juice

2/3 cup local honey (unhealthier version can be a little less than ½ cup brown sugar)

2 ½ tbsp. butter

1 tsp vanilla extract

1/8 tsp salt

 

METHOD:

 

1)   Preheat oven to 325°F and line a baking tray with parchment paper.

2)   Put oats, coconut, nuts, and OJ in a medium bowl and mix until well combined. Let sit for 5 minutes, then add to baking tray and toast for 10 minutes or mixture looks lightly toasted.

3)   Meanwhile heat honey, butter, vanilla, and salt in a small saucepan on low heat. Stirring continuously until smooth and completely mixed.

4)   Once the honey mixture is heated, combined well with toasted oat mixture.

5)   Pour granola mixture back on baking tray and spread/flatten evenly.

6)   Bake for 15 minutes, more for crunchier, less for chewier. Let it completely cool before cutting into pieces. Enjoy!!
