Campfire Loaded Potatoes
/Besides cooking fish while camping, baked potatoes is one of my favorites. Just recently I thought how amazing would a baked potato be if I loaded it up and cooked it in all together in the campfire?! Well, the answer is AMAZING, and I want to share the recipe with you to try next time you go camping.
Depending on time and location there are two ways to prepare your potatoes. I will tell you both. But first here is what you will need!
INGREDIENTS:
1 large potato
1 garlic clove
1 tbsp of Butter or almond butter
1 green onion sliced
1/4 cup of shredded white cheddar cheese (or any cheese of your choice)
1 tbsp Sour cream
salt and pepper to taste
1 tbsp water
You can also add bacon or turkey bacon, tomatoes, spinach, or any other ingredients that you like.
First way to prepare potatoes:
1) Get a pot, fill with 3 cups of water, a dash of salt and bring to a boil.
2) Meanwhile cut the potato in 1 inch cubes, and dice the garlic. Once water is close to boiling add potatoes and diced garlic. Allow to boil then reduce heat to medium. Cook until potatoes are starting to get soft then drain.
3) Wrap potatoes in aluminum foil.
4) Once you are at your campsite and have gotten your fire going, you can add butter, green onion, cracked pepper, and cheese or any other ingredients you prefer.
5) Close the potato and ingredients in the foil, and add to hot embers in fire. Make sure your not adding directly into flames. I usually pull hot embers to the side of the fire and place the potato, or add a flat rock on top of embers, let it get hot then add what I plan to cook.
6) Cook for 10-15 minutes or until potatoes are fully cooked and cheese has melted.
7) Remove from fire, add sour cream and ENJOY!!
SECOND WAY TO PREPARE:
1) Get your fire going. While fire is getting hot and embers are being created, cut up the potato into 1 inch cubes. Dice garlic.
2) Add potato, garlic, 1 tbsp of water, and a dash of salt into foil and wrap, add to hot embers. Let cook for 30-40 minutes or until potatoes get soft.
3) Then add your cheese, green onion, butter, and pepper to taste or any other ingredients you like. Cook for an additional 10-15 minutes or until potatoes are fully cooked and cheese has melted.
4) Remove from fire, add sour cream and ENJOY!!!
