Egg Benedict on Everything Bagel

Ingredients:

1 Everything bagel

2 eggs

1/2 cup of spinach

2 mushrooms, sliced thinly

1 Slice provolone cheese

2 tablespoon of vinegar

Coconut oil

Salt, paprika, and pepper to taste

Ingredients for Hollandaise:

1 cup raw cashews (soak in water overnight)

1/4 cup nutritional yeast

1 Lemon Juiced

Pinch of Turmeric

paprika or cayenne if you want a kick!

Salt and Pepper to taste

Blend all ingredients together for the sauce!

Directions for everything else:

First get a pot fill it up with water about an inch and half and add the 2 tablespoons of vinegar set aside(wait to cook).

Then Start cutting up the mushrooms and get a small skillet to cook the mushrooms and spinach in.

Cooking Spinach and Mushrooms:

Get a small skillet set on the stove at medium heat. Add a dollop of coconut oil, then add the spinach and mushrooms. You can also add sliced garlic or garlic salt. **** Sautee until spinach is soft and mushrooms are cooked. Add Slice of Provolone cheese and let melt.

***This is when you will put the pot of water with vinegar on the stove to medium-high heat.

Cooking Poached Eggs

Heat water to a simmer.

Using a spoon spin a cyclone in the water and drop an egg into it. This makes the egg stay together. Cook egg for 4 minutes. Remove and cook the second egg. You can also just cook both eggs together but sometimes they stick together.

PLATE IT!

Toast the bagel, add mushrooms and spinach first, then poached eggs. Finally, add the Sauce!
