Another awesome breakfast Omelet jam-packed with veggies. Made it this morning, and it might be another favorite. I also felt good about eating a big serving of veggies for breakfast!

3 eggs
2 kale leaves
1/4 red onion

1 slice of swiss (optional)
Directions:
- Heat a pan over medium heat.
- While pan heats, take all vegetables and put in food processor and blend until all vegetables are finely sliced.
- Add vegetables to pan with butter, or choice of oil.
- Cook vegetables until tender (I sometimes add 1/4 teaspoon of water and cover to steam quickly).
- Add 2-3 eggs and mix together with veggies
- Add cheese and let it melt.
- Serve!
Can serve one hungry nursing mommy, or 2 people.
