Three Healthy Breakfast Ideas

Here are 3 of my go to breakfast recipes filled with all the good stuff!

Protein Maca Pancakes

Ingredients:

1 banana

Cinnamon

1 cup Pancake powder with protein mix

1  tablespoon maca

3/4 cup water

1/4 teaspoon of Vanilla extract

(if you want a little crunch to your pancakes, add your nut of choice in a food processor, or crush by hand and add to the mix)

Directions:

  1. Get a bowl, peel the banana and mash with a fork really well! Then add cinnamon and mix.
  2. Heat a pan on medium.
  3. Add pancake with protein mix, maca, and water to the mashed banana and mix well.
  4. Add butter, or coconut oil to your pan and pour pancake mix.
  5. Makes about 3-4 large pancakes 8 small pancakes. Serve and ENJOY!

Tropical Smoothie

1/2 banana

1/2 cup pineapple

1/2 cup mango

1 orange (peeled)

1 scoop protein powder

1 cup coconut water

Blend and enjoy!

 

 

 


Jam-Packed Veggie Omelet

Another awesome breakfast Omelet jam-packed with veggies.  Made it this morning, and it might be another favorite. I also felt good about eating a big serving of veggies for breakfast!

Ingredients:

3 eggs

2 kale leaves

1/4 red onion

1-inch thick slice of sweet potato

1/4 bell pepper

2 mushrooms

3 asparagus sprigs  (are they called sprigs? idk)

1 slice of provolone (optional)

1 slice of swiss (optional)

Directions:

  1. Heat a pan over medium heat.
  2. While pan heats, take all vegetables and put in food processor and blend until all vegetables are finely sliced.
  3. Add vegetables to pan with butter, or choice of oil.
  4. Cook vegetables until tender (I sometimes add 1/4 teaspoon of water and cover to steam quickly).
  5. Add 2-3 eggs and mix together with veggies
  6. Add cheese and let it melt.
  7. Serve!

 

Can serve one hungry nursing mommy, or 2 people.
