Winter Veggie Soup
/Winter is here and Summer didn’t even say BYE! I woke up and found that is was cloudy and COLD. I KNEW I needed to make the best soup ever that was healthy and would warm my soul. So here it is a vegetable soup with onion, garlic, cucumber, ginger, potatoes. turnips, squash, chickpeas, carrots, and corn. With an added green chili powder option and topped with cilantro and cotija cheese. Prepared in a way that your Abuela (grandma) would be proud of.
Enough for 4 people with 2-3 small bowls or 1 person and 10 bowls your choice. I took the latter of course.
